Salted Caramel Coconut Ice Slice

Slice base

-Packet sweet biscuits

-1 1/2 cups desiccated coconut

-100g melted butter

-1 can condensed milk


Coconut Ice layer

-2 cups desiccated Coconut

-1/2 can condensed milk

-1 cup icing sugar


Method

  1. Prep a pan or dish with baking paper

  2. In a food processer, crush biscuits until they resemble crumbs

  3. add in the melted butter, coconut, condensed milk & a dollop of salted caramel sauce.

  4. press firm into the prepped dish & refrigerate for a few hours

  5. prepare the coconut ice layer by mixing coconut, condensed milk, icing sugar & dollop of salted caramel sauce

  6. Add more condensed milk to achieve desired consistency

  7. Add on top of the prepared biscuit base

  8. Spread salted caramel sauce on top and sprinkle with coconut

  9. Let set in the fridge and cut into squares
