Salted Caramel Banana Muffins


This is hands down the best banana muffins recipe base, I usually add raspberry & choc chips, but thought.. why not make it salted caramel

Ingredients

-1 cup castor sugar

-150g softened butter

-3 eggs

-150g vanilla Yoghurt

-2 over ripe or frozen then thawed banana

-2 1/2 cups flour

-1 teaspoon baking soda


Method

  1. pre-heat oven to 180° & prep muffin tin with muffin cases

  2. In a mixer, cream together caster sugar & softened butter

  3. Beat in the eggs until pale & fluffy

  4. Mix in the yoghurt & banana until combined

  5. fold in the flour & baking soda until combined

  6. 1/4 fill each of hte muffin caseswith batter

  7. add a dollop of salted caramel sauce in the middle of the batter

  8. top with more batter until muffin cases are 3/4 full

  9. Bake for 20 minutes or until golden brown on top

  10. Serve warm or re-heat in the microwave for 15 seconds

These can be frozen and re-heated too!!
