Giant Salted Caramel Stuffed Choc Cookies

Ingredients

-230g cubed butter

-200g Brown sugar

-100g castor sugar

-2 eggs

-360g plain flour

-30g cocoa powder

-1 teaspoon bicarb

-1 tablespoon cornflour

-Big pinch of salt flakes

-1 packet choc chips


Method


  1. In a mixer, cream the butter, brown sugar & caster sugar together until creamy

  2. add the eggs and beat again until smooth & pale

  3. mix in the plain flour, cocoa powder, bicarb soda, cornflour & salt to form a dough

  4. mix in the choc chips

  5. Refrigerate dough covered in cling wrap for at least an hour.

  6. After the dough has been chilled, mould into little cups and scoop *COLD* Salted Caramel Sauce into them. Add more dough to the top to seal the sauce inside and roll into a ball.

  7. Place on baking paper at least 10cm apart.

  8. Bake for 20 mins at 180°

Best served warm
